Abstract

Alkoxypyrazines belong to the group of important N-heterocyclic compounds characterized as flavour substances. Their strong aroma and extreme richness give the possibility of setting aromatic and fragrant compositions of various types and predetermines the commercial success of synthetically produced alkoxypyrazines. Synthetic methods for alkoxypyrazines are surveyed. The most frequently used method is the reaction of chloropyrazines prepared in various ways with sodium or potassium alkoxides.
