Abstract

Proteins and peptides represent important components of saliva. A wide spectrum of their effects is necessary for physiological function of the oral cavity. The aim of the article is to provide review information on selected groups of salivary proteins and peptides, namely histatins, proline-rich proteins and statherin. Attention is paid to their structure, behavior in the mouth and functions.
