Abstract

Many studies observed that increased consumption of cereal grains is associated with a reduced incidence of lifestyle diseases. Cereals are a rich source of functional compounds including dietary fibers, β-glucans, resistant starches, vitamins, minerals and other bioactive phytochemicals, therefore they are suitable and increasingly used raw materials for production of functional foods.
