Abstract

The review presents the results of oxidation studies of naturally occurring flavonoids in particular quercetin. These compounds (original dyes of works of art) undergo aging and degradation. It is focused on the description of the oxidation pathways and identification of degradation products. This is of importance in saving cultural heritage.
